The holidays are here, Thanksgiving is in 2 days and my husband has already made his special and oh so amazing pumpkin cobbler for the season. I have been dreading this since I was diagnosed as diabetic back in March, especially after breaking down at Halloween and eating more candy than I should have.
However, there is a bright side, I am now determined to create sweet recipes for myself that are diabetic friendly. I decided to start with Peanut Butter Cookies since I have become addicted to peanut butter since my diagnosis. It took some trial and error and some fun times in the kitchen, but I have done it. I now have a cookie that I can eat that doesn’t spike my sugar and is only around 3-5 carbs per cookie depending on the size of the cookie.
Introducing The Best 4 Ingredients Peanut Butter Cookie!!!
You may notice that the egg shows 2, but the recipe only calls for 1, well that is actually part of the trial and error and fun that I told you about. Let me tell you what I mean. I originally started the recipe with 2 eggs, thinking that since there is no flour, I needed more as a binding agent. That was a mistake as the cookies came out quite greasy and definitely not edible, straight into the trash they went. However, the fun part of this story is how the cookies looked when they were done. My husband was helping me in the kitchen and sprayed the cookie sheet for me…he went a little overboard on that one. The foaminess that you are seeing is actually a mixture of the grease from the cookies, ie. the extra egg and the excess spray. Needless to say that hubby is no longer allowed to use cooking spray!
Despite the epic fail, we had a ton of fun with it and ended up making the perfect batch the next time around! As shown above, there is only 4 ingredients, SPLENDA®, peanut butter, I prefer creamy, egg and vanilla extract! There is no specific order to add these together, just pour into a mixing bowl and blend together until smooth! Set the oven to 350° and spray a cookie sheet. I recommend one that includes flour for baking and please, don’t follow my husbands example, a little goes a long way. Then simply scoop them onto the cookies sheet.
You could keep them this way, and I did make a few that are Peanut Butter Cookie Balls, but I prefer mine to have the traditional criss cross pattern. If that is your desire too, and considering that these cookies will not flatten on their own, just press down on the cookies with a fork in one direction and then again in the other direction. TaDa, old fashioned Peanut Butter Cookies!
Bake for approximately 12 minutes and you have yummy peanut buttery goodness!
So now, thanks to SPLENDA® and my favorite ingredient of all, peanut butter, I now have a special treat, just for me to enjoy while my family enjoys theirs. And let me tell you, the 18 cookies I made are almost gone and yet my sugar levels are right on target where they are supposed to be. That is a win in my book! Now I just need to head back to Walmart and pick up some more SPLENDA® to get me through the holidays! Also, you bet that I am going to be experimenting with other sweet treats as well!
