When the doctor gave me some disturbing test results that ultimately landed me with a diabetes diagnosis, I knew I had to make some major lifestyle changes. Hello, my name is Lena and I am an emotional overeater and food addict! I have been since I was 5 but that is a story for another day. Even though I am choosing low carb foods in order to keep my blood sugars at a safe level, I still find that I binge more often than I care to admit, even to myself. Giving in to the temptation is making it impossible to lose the weight and it’s not like I am hungry, it’s the fact that I want the food, not need. And when I want the food, my brain tells my stomach that I am hungry.
What I have found recently that really works for me is a special low carb bread recipe using psyllium husk fiber. Because of the high amounts of fiber in the bread, it is incredibly filling and even though I still WANT the food, my stomach doesn’t respond and I am able to say no. The problem is that the bread needs to be eaten within a day or 2, making the bread is labor intensive and the ingredients add up pretty quickly, so it is a once in awhile treat.
