Over the years, I have been guilty of feeding the kids fast food or other junk on busy school nights, just to save time. Not anymore, I have put together quite an extensive list of recipes that are virtually effortless, at least on school days. One of our favorites is my Chicken Enchiladas with only 4 ingredients and next to no cooking on my part. I pick up the Walmart’s Marketside Rotisserie Chicken meal from the deli section, and the chicken is always juicy and tender, perfect for the enchiladas. Seeing that oh so familiar sign at Walmart makes it easy for me to find what to make for dinner quickly and easily!
I especially love this meal because it is one I can enjoy with my family too because of the low carb tortilla options.
On nights that I want an even simpler meal, I pick up the Marketside pizza and Sprite from the Effortless Meals at Walmart, and I love that the Effortless Meal options are healthy and fresh and perfect for the busy back to school season! All year long actually and we are always much happier as a family when we have time to sit and eat together!
- Walmart Marketside Rotisserie Chicken
- Shredded Cheese
- Large Can of Enchilada Sauce
- Shred chicken.
- Layer chicken and cheese on tortilla.
- Bake at 400 degrees for 10 minutes.
- Pour on enchilada sauce.
- Layer on more cheese.
- Bake for additional 5 minutes.
