About a year ago, my parents started going to this family style Italian restaurant a few miles away and fell in love with their baked rigatoni. Since then, they make it all the time at home (theirs is better than the restaurant in my opinion) but they always make TOO much and they send the rest to us. Hubby really likes it and I think it’s just okay…the kids eat pretty much anything.
Well I decided I wanted to try and make MY own version of Baked Rigatoni that I could enjoy more. Well……..no rigatoni! But I have Penne so instead I thought why not mix it up a bit. So I set out to make a YUMMY Baked Penne, but I wanted it to be really creamy. CREAM CHEESE, I thought, why not??? So I made it…..I loved it…..the kids begged for it……and hubby? Well let’s just say he’s a very happy man!!
So here it is, Creamy Baked Penne:
- 1lb ground beef
- 1 jar of pasta sauce
- 1lb of penne pasta
- 6oz cream cheese
- 2 cups mozzarella cheese
- 1/2 cup parmesan cheese
Cook the pasta until al dente while browning the meat until fully cooked.
Add the cream cheese to the meat and stir until completely melted and mixed together.
Add the pasta sauce and heat through. You can add extra seasoning here if you wish.
Add the pasta and parmesan cheese and mix well.
Transfer mixture to a 9X13 casserole dish.
Sprinkle with a little more parmesan and top with mozzarella.
Bake at 350 degrees for 30 minutes or until cheese is bubbly and golden brown.
